Michelle's Southern Chili Hotdish

2 lbs. of ground beef
2 cans of diced tomatoes
1 medium diced onion
1 green diced pepper
1 clove of diced garlic
2 boxes of Jiffy corn bread (follow directions of corn bread mixture on box)
Salt to taste
Pepper to taste
Chili powered to taste (2 tablespoons works well)

Brown meat and season with salt and pepper. Mix in tomatoes, onion, pepper, garlic. Bring all to a simmer. In a large shallow casserole dish layer in the meat and veggie mixture. Top with corn bread mixture and bake at 350 degrees for about 30 to 35 minutes. Let corn bread turn golden brown. Let rest for 5 to 10mins and serve.

Wow no dairy and it still tasted good! This is a really low-fat meal that still has flavor. Adapt this recipe to your favorite chili mixture.
